Everly Mocha Donuts

Who doesn’t love a cup of coffee and donut for a weekend breakfast or brunch treat?  

These mocha donuts are made with Everly Instant Coffee for a touch of rich coffee flavor right in the dough and the glaze! They are gluten-free and just need 10 mins in the oven.

Ingredients

    • ¾ cup granulated sugar
    • ¼ cup light brown sugar
    • ½ cup unsalted butter (room temperature)
    • 2 eggs room temperature
    • ¾ cup milk, warmed slightly
    • 1 Everly Instant Coffee stick pack

    • 1 tablespoon vanilla extract
    • 2 ⅓ cups certified gluten free oat flour
    • ¼ cup cocoa powder sifted
    • 1 ½ teaspoons baking powder
    • ¼ teaspoon baking soda
    • ¾ teaspoon coarse Kosher salt

    • 1 cup powdered sugar
    • 2 ounces cream cheese (room temperature)
    • 1 tablespoon milk, warmed slightly
    • 1 Everly Instant Coffee stick pack

    Directions

      1. Preheat the oven to 375°F. Spray donut pan with nonstick cooking spray. (NOTE: If you only have 1 donut pan, you can bake these in batches!).

      2. On medium speed, beat the sugars and butter until well combined. Add the eggs, one at a time, mixing well after each addition, scraping down the bowl as needed.

      3. In a separate bowl, whisk together oat flour, cocoa powder, baking powder, baking soda, and salt. In a measuring cup, mix together the warmed milk, Everly Instant Coffee Stick and vanilla extract.

      4. Alternating the flour mixture and milk mixture, add the first ⅓ of the flour mixture to the butter mixture, and beat on medium speed. Once combined, add ½ of the milk mixture, and mix to combine. Repeat the process, until the ingredients have all been added.

      5. Place the mixture into a piping bag, and pipe the mixture into the donut pans, leaving about ¼ inch at the top of the pan.

      6. Bake for 8-10 minutes, spinning the pan halfway through baking.

      7. Remove from the oven, and let cool 1-2 minutes before turning out onto a cooling rack to cool completely. If baking in batches, repeat the process with remaining batter.

      1. While the donuts bake, make the coffee glaze by whisking together the instant coffee and warm milk.

      2. Next, whisk together the cream cheese and powdered sugar until smooth. Add the coffee milk mixture, whisking until smooth.

      3. Once the donuts are cooled, dip the top half of the donut into the glaze. Turn the donut over and let sit for 5 minutes. For a thicker layer of glaze, repeat the process.

      4. Sprinkle the donuts with shaved semi-sweet chocolate for a bit of extra chocolate flavor and enjoy!
