Keto Ice Cream Bars

We're the first to admit that store-bought ice cream bars are delicious, but they just aren't healthy enough to eat all the time.  That is, until we found out that we could make sugar-free, dairy-free ice cream bars that taste like the real thing!  You’ll never buy ice cream bars from the store again.

 Keto Ice Cream Bars

Prep time: 5 mins
Yield: serves 4


  • 1 cup heavy cream (or coconut milk)
  • 1 cup unsweetened (unflavored or vanilla) almond milk
  • 1 teaspoon Everly drink mix, or more to desired sweetness 
  • ¼ cup Swerve confectioners’- style sweetener or equivalent
  • 1 teaspoon strawberry, raspberry (or flavor of choice) extract (optional)



  1. In a blender, blend all the ingredients until well combined
  2. Pour the mixture into 4 Popsicle molds
  3. Place in the freezer for at least 2 hours before serving
  4. Store covered in the freezer for up to 1 month
