Sugar-Free Ice Cream Bars

There is nothing quite like enjoying an ice cream treat on a hot summer day! 
With just 5 ingredients and a popsicle mold you can make sugar-free ice cream bars at home. 

We used Pomegranate Berry Belly Health to give these bars a bright berry flavor and color without adding sugar or artificial food dyes.

They can be made vegan and dairy-free with coconut and almond milk. Heavy cream can be used in place of coconut milk depending on what you have on hand. Either way, this sweet summer treat is sugar-free and keto-friendly!

With just 5 ingredients and a popsicle mold you can make sugar-free, vegan, keto-friendly ice cream bars at home.

Ingredients

  • 1 cup coconut milk (or heavy cream)

  • 1 cup unsweetened (unflavored or vanilla) almond milk
  • 1 TSP of Pomegranate Berry Belly Health, or more to desired sweetness

  • ¼ cup Swerve confectioners-style sweetener (or an equivalent sugar substitute of your choice.)

  • Optional: 1 teaspoon strawberry, raspberry (or flavor of choice) extract

  • 4 Popsicle molds

Directions

  1. In a blender or with a hand mixer, blend all the ingredients until well combined

  2. Pour the mixture into 4 Popsicle molds
  3. Place in the freezer for at least 2 hours before serving
  4. Store covered in the freezer for up to 1 month
